Breakfast Stromboli: The Morning Mashup You Didn’t Know You Needed

Sliced savory breakfast pastry with sausage, eggs, melted cheese, and herbs

Some of the best recipes aren’t planned — they happen because you open the fridge, see what’s there, and decide to make something worth eating. That’s exactly how this Breakfast Stromboli came to life.

A Pillsbury pizza crust, a pound of breakfast sausage, and some scrambled eggs. Roll it up, bake it golden, and slice it open. What comes out is crispy on the outside, warm and savory on the inside — the kind of breakfast that makes everyone come to the kitchen.

What Is a Stromboli?

A stromboli is essentially a rolled sandwich — you take a flat dough, load it with fillings, roll it into a log, and bake it. Unlike a calzone (which is folded like a pocket), a stromboli is a tight spiral roll, so every slice shows off all the layers inside. It originated in the Philadelphia area in the 1950s and has been a lunch and dinner staple ever since. But there’s absolutely no reason it can’t anchor a Saturday morning.

Why Pillsbury Pizza Crust Works Perfectly

You could make your own dough. But Pillsbury refrigerated pizza crust is genuinely great for stromboli — it’s pliable, bakes up with a satisfying chew, and gets beautifully golden in the oven. It’s also the reason this recipe goes from idea to table in under 45 minutes. On a weekend morning, that matters.

Unroll it flat on a baking sheet, load your fillings down the center, and roll it up. That’s it. The crust does the work.

The Sausage Is the Star

A pound of regular breakfast sausage — browned and crumbled — is the backbone of this recipe. It brings fat, salt, and that familiar savory-sweet breakfast sausage flavor that ties everything together. But this is also where you can really make it your own:

  • Spicy breakfast sausage — swap regular for hot sausage and the whole thing has a kick that wakes you up better than coffee. This is the move if you like heat in the morning.
  • Chorizo — Mexican chorizo crumbled in place of breakfast sausage gives it a smoky, deeply spiced flavor that pairs incredibly well with eggs.
  • Italian sausage — for a more classic stromboli feel, sweet or hot Italian sausage works beautifully.

The Eggs

Scramble them soft — slightly underdone is intentional here. They’ll finish cooking inside the stromboli as it bakes, so if you scramble them all the way through before rolling, they’ll be overdone by the time it comes out of the oven. Pull them off the heat while they’re still just a little loose and glossy. They’ll be perfect inside.

Make It Your Own

Once you’ve got the base down, there’s a lot of room to play:

  • Add cheese — shredded cheddar, pepper jack, or mozzarella melted into the filling takes it to another level entirely
  • Add vegetables — diced bell pepper, jalapeños, or sautéed onions mixed in with the sausage add color and flavor
  • Finish with salsa — slice it open and spoon fresh salsa right over the top. The cool, bright acidity against the warm, rich filling is a combination you won’t want to skip. Green salsa works especially well.
  • Serve with hot sauce — a good bottle of hot sauce on the table is non-negotiable in this house
  • Dipping sauce — a side of sour cream, salsa verde, or even ranch for dipping turns this into a full spread

The salsa topping especially is something you should try at least once. It cuts through the richness of the sausage and eggs and makes the whole thing feel fresh rather than heavy. Don’t skip it.

Breakfast Stromboli

Serves: 4–6  |  Prep: 15 min  |  Cook: 25 min  |  Total: 40 min

Ingredients

  • 1 can Pillsbury refrigerated pizza crust
  • 1 lb regular breakfast sausage (or spicy — see notes)
  • 6 large eggs
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 cup shredded cheddar or pepper jack cheese (optional but highly recommended)
  • 1 egg, beaten (for egg wash)

To Serve

  • Fresh salsa or salsa verde spooned over the top
  • Hot sauce
  • Sour cream for dipping

Instructions

1. Preheat and prep. Preheat your oven to 375°F. Line a rimmed baking sheet with parchment paper.

2. Brown the sausage. In a skillet over medium-high heat, cook and crumble the breakfast sausage until fully browned, about 8–10 minutes. Drain excess fat and set aside.

3. Scramble the eggs. In the same skillet, melt butter over medium-low heat. Whisk together the 6 eggs with a pinch of salt and pepper. Pour into the pan and scramble gently, pulling them off the heat when they’re just barely set — still slightly glossy. They’ll finish in the oven.

4. Unroll the dough. Roll out the Pillsbury pizza crust onto your prepared baking sheet into a rectangle. If it springs back, let it rest for 2 minutes and try again.

5. Layer the fillings. Spread the scrambled eggs down the center third of the dough lengthwise. Top with the browned sausage, then sprinkle cheese over everything if using.

6. Roll it up. Fold the long sides of the dough over the filling, overlapping slightly in the center. Pinch the seam and ends to seal. Carefully flip it seam-side down on the baking sheet. Brush the top and sides with the beaten egg wash.

7. Bake. Bake at 375°F for 20–25 minutes until deep golden brown. Let it rest for 5 minutes before slicing.

8. Serve. Slice into thick rounds and spoon fresh salsa generously over the top. Set out hot sauce and sour cream on the side.

Notes

  • Spicy version: Swap regular sausage for hot breakfast sausage or add diced jalapeños to the filling. Finish with a spoonful of salsa verde on top.
  • Salsa topping: Don’t skip this — the cool, fresh salsa against the warm, rich filling is what makes this dish. Use your favorite store-bought or homemade.
  • Make ahead: Assemble the night before, refrigerate unbaked, and bake fresh in the morning.
  • Leftovers: Reheat slices in a 350°F oven for 8–10 minutes to get the crust crispy again. Microwaving works but softens the crust.
  • Add-ins: Diced bell pepper, onion, or green chile mixed into the sausage are all excellent additions.
